Yuzu is highly valued in Japanese cuisine for its unique aroma and bright, complex flavour. It's more floral and less acidic than lemon, with a slightly sweet undertone.
Sudachi is another Japanese citrus, smaller and sharper than yuzu, with a bold acidity similar to lime. It brings a refreshing, clean tartness to the sauce, balancing the floral richness of yuzu.

It can be used directly as a salad dressing for cold dishes, particularly those with fresh greens, seaweed or tofu. You can mix it with a bit of sesame oil for a more rounded dressing and dress cold noodles (see recipe below)
