Buddha's Hand season is now upon us! Green, unripe Buddha's Hands are available now. Fruits will ripen during September and October, changing in colour from green to yellow then yellow.
Crazy looking this citrus also surprises by having no juice, just skin and pith! Wildly aromatic the fruit delivers before eaten by emitting strong citrus notes that emanate from this alien looking centrepiece. The skin emits even more potent perfume once grated or peeled and is added to vegetables or in baking and infuses very well into flavour vinegar, salt, sugar, syrup and sweet alcohol such as "~cellos". The pith is less bitter than the pith of other citrus and can be used, raw, baked, pickled, preserved or infused.
Stores well in the fridge for 14 days.
