Very small fruit that grow in clusters on branches, Sudachi have a lime flavour with peppery, herbal undertones. Famously paired with matsutake mushrooms they work wonderfully well with all fungi. Most commonly used unripe and green both zest (minutely grated) and juice are tart and aromatic and like yuzu have great versatility being used with fish, sushi, sashimi, ceviche, cakes, ice cream, sorbet, cocktails and soft drinks. Organically grown in Morocco the fruits are 40-45mm diameter and 40-50g. Fruit is expected to last unripe and green through October and hopefully into November.
