Taken from the same plant as the red berries but early when immature they have a very fruity taste and fragrance likened to pine and kaffir lime leaves with notes of mint and candied lemon. The berries are best stored whole and finely ground before using sparingly with meat, fish or desserts, especially good with barbecued chicken and an instant hit when lightly dusted on vanilla ice cream or sorbet.
A whole berry in the mouth is something of an initiation to the unenlightened as they have an anaesthetic effect on the mouth with a spiciness that is very hard to place, somewhere between lemongrass, roses and pepper.
