This sake has an intense yuzu bite to the nose, with a ripple of acidity cutting through the palate to give exciting freshness and balance. The finish is biting and infused with tart and complex citrus, the body and flavour are enhanced by the addition of lactic bacilli. The combination of body and acidity gives incredible balance whilst maintaining an easy drinking freshness.
