Roasted Sesame & Yuzu Truffles

How to make these exquisite Roasted Sesame & Yuzu Truffles:


Ingredients:

100g Vanilla Sponge, blitzed to a crumb

200g White Chocolate, melted

60g Double Cream

30g Roasted Sesame Seeds

1 tsp Yuzu Juice

Candied Yuzu Zest to decorate

 

Method:

1.    Mix the double cream and yuzu juice into 150g melted white chocolate. Stir in the cake crumbs and 20g Sesame Seeds. Set aside for a while to cool.

2.    Once firmed up slightly, take teaspoonfuls of the mix and roll into small balls in your hands. Lay on a lined baking tray and pop into the fridge for 1 hour.

3.    Drizzle over the remaining white chocolate, sprinkle with the remaining sesame seeds and decorate with candied yuzu. Set in the fridge before serving.
