As a salad dressing: Create a distinctive salad dressing by combining the smoked vinegar with olive oil, Dijon mustard, finely chopped shallots, salt and pepper. The smoky flavour will add depth to your salads, especially those featuring greens such as kale or spinach.

As a glaze: Use this smoked vinegar as a glaze for grilled or roasted meats such as chicken, pork; it also works well with tofu. Combine it with honey, brown sugar, soy sauce, and a dash of chiili for a sweet and smoky glaze that caramelizes beautifully under the grill or in the oven.

This Sakura cherry wood smoked rice vinegar is produced by Hinode at the Tajima Brewery in Hyogo, Japan. Hinode is renowned as an expert in crafting vinegar using traditional methods.

This unique product has been tailored for marinating fish fillets, offering a soft and well-balanced fusion of savoury smoky flavours to complement the fish perfectly.

Rice Vinegar

To craft this distinctive vinegar, Hinode blend red vinegar, derived from sake lees, with alcohol vinegar infused with cherry wood shavings. This gives the vinegar its delicate, yet distinct smoky notes, that go particularly well with oily fish varieties such as mackerel and sardines.

Enhancing flavour

It can be used to easily enhance a dish, used as a marinade for fish or meat dishes, as a glaze or to add interest to salad dressings.
