How to choose the right sake cups and sets
The cup you drink from changes the way sake tastes. A small, narrow ochoko, the type you'll find in most izakayas, concentrates flavour on the tip of the tongue. This brings sweetness forward and softens acidity. Wider sake cups do the opposite: they spread the liquid across the palate and let more aroma rise from the surface, so you'll pick up floral and fruity notes that a smaller cup would hide.
Material plays a part too. Porcelain keeps sake cool and clean tasting, which suits a light, chilled ginjo. Heavier stoneware retains warmth, making it a natural companion for a rich junmai heated to around 45°C. This is the point where earthy, rice-driven flavours really open up.
Our Japanese sake sets pair cups with a ceramic carafe (called a tokkuri in Japanese). The carafe's narrow neck holds heat in when you're warming sake and slows the pour so you can serve without spilling.
