Homemade Teriyaki Sauce Recipe

A classic four-ingredient base recipe, ready for you to put your own spin on. 

Ingredients

  • 4 tablespoons of Japanese soy sauce
  • 4 tablespoons of Hon mirin
  • 2 tablespoons of Ozeki sake
  • 1 tablespoon of Okinawan brown sugar (kokuto)

Method

  1. Add the soy sauce, sake, mirin and sugar to a small saucepan.
  2. Place over a medium heat and stir gently until the sugar has completely dissolved.
  3. Bring the mixture to a gentle simmer and cook for 5–10 minutes, or until the sauce has reduced slightly and thickened to your preferred consistency.
  4. Remove from the heat and allow to cool slightly. The sauce will continue to thicken as it cools.

This recipe is easy to scale up and keep in the fridge for up to a week. 

Traditionally used in Japan to glaze and flavour fish, teriyaki sauce is wonderfully versatile. 

Brush it over fish, chicken, meat or vegetables before grilling, barbecuing or roasting, or use it as a marinade to infuse ingredients with its rich, sweet and savoury flavour.

It can also be drizzled over rice, noodles and stir-fries, or used as a dipping sauce.

Start with the traditional base recipe and add your own twist with ingredients such as ginger, garlic, sesame oil or honey.
