A traditionally brewed Japanese soy sauce made in the spirit of Kanazawa’s long-established soy-making heritage, which dates back to the 15th century.
Crafted from whole soybeans, it delivers greater depth and body, sitting somewhere between classic koikuchi and lighter usukuchi styles.
Often described as umakuchi, meaning “deliciously mellow”, this style is known for its natural sweetness and pronounced umami.
Naogen uses just four locally sourced ingredients: whole soybeans, wheat, sea salt and pure water drawn from Mount Haku. The sauce is slowly fermented for a full year in cedar barrels, allowing it to develop a rounded, full-bodied character with impressive length on the palate.
