Frequently asked questions

We stock a variety of shiitake mushrooms, including Donko and Koshin, as well as shiitake products such as powders and sauces – giving you the unique, earthy and umami flavour you need to enhance your home cooking.

In terms of our dried shiitake mushrooms, the two types that we stock are Donko and Koshin. Both types of shiitake mushrooms provide delicious flavour to many Japanese dishes; however, if you want to know the key differences between these types of fresh mushrooms, you can take a look at our shiitake mushrooms guide:

Feature Donko Koshin
Cap Shape Thick, round, domed Thinner, larger, more open/flat
Texture Dense and firm, meaty Softer, less dense
Flavour Very rich, strong umami; perfect in broths and soups Milder umami; still aromatic but less intense
Uses Traditional Japanese dishes, soups, simmered dishes and recipes where the mushroom is the star Stir-fries, soups, everyday use and dishes where mushrooms play a supporting role

Yes – all of our dried shiitake mushrooms are organic.

Shiitake mushrooms are incredibly versatile and feature in a wide range of delicious Japanese dishes, known for their amazing umami flavour. If you’re looking for a great summer dish, try a Japanese Shiitake Mushroom Salad, which combines thinly sliced shiitake with fresh greens. If you prefer something comforting and rich, the Shiitake & Miso Risotto showcases shiitake’s deep umami flavour in a creamy, savoury rice dish balanced with miso flavours. For those who love cooking over open flame, shiitake also shines in grilled dishes, particularly donko mushrooms – get inspiration from  5 Dishes to Make on a Japanese Konro Grill, where their meaty texture and smoky aroma stand out.

The shelf life of dried shiitake mushrooms is quite long compared to fresh mushrooms.

Unopened, properly stored: 1–2 years at room temperature in a cool, dry, dark place.
Opened package: Best used within 6–12 months for optimal flavor, though they can last longer if kept airtight and away from moisture.

Keep your dried shiitake mushrooms in an airtight container, and store in a cool, dark place away from heat and sunlight. Always follow the details on your packet to keep your products fresh.
