A quick, glossy stir-fry-style beef dish with rich Japanese-inspired flavour. Perfect for a weekend dinner in under 30 minutes.

Ingredients

For the beef

  • 300g beef (sirloin, ribeye or frying steak), very thinly sliced
  • 3 tbsp Japanese soy sauce (koikuchi-style recommended)
  • 1½ tbsp mirin
  • 1 tbsp brown sugar
  • 1 tsp fresh ginger, finely grated
  • 1 garlic clove, finely grated
  • 1 tsp sesame oil (toasted)
  • 1 tbsp vegetable oil (for frying)
  • 1 tsp toasted sesame seeds (plus extra to serve)

For the sesame rice

  • 150g Japanese short grain rice
  • 1 tsp sesame oil (toasted)
  • 1–2 spring onions, finely sliced
  • Pinch of salt (optional)
  • Extra toasted sesame seeds to finish

Method

1. Rinse rice until water runs clear. Cook according to packet instructions. Once done, fluff and keep warm.

2. Mix the glaze - In a small bowl combine: soy sauce, mirin, ginger, garlic, sugar, and sesame oil.

3. Cook the beef - Heat vegetable oil in a hot pan or wok. Add beef in batches and sear quickly for 1–2 minutes until browned. Pour in the glaze and allow it to bubble for 1–2 minutes until it thickens and becomes sticky and glossy. Toss to coat evenly.

4. Finish the rice- Stir sesame oil through the warm rice and top with spring onions and sesame seeds.

5. Serve - Spoon the sticky beef over the rice and drizzle over any remaining sauce from the pan. Finish with extra sesame seeds.
