10 Year Old Soy Sauce
This is the 10 year aged soy sauce from Kamebishi. Owned and run by the Okada family and operating from the same Samurai house where the business began in 1753, this is a company steeped in tradition. Kamebishi soy sauces are made to a recipe that is 250 years old and aged in 100-year-old cedarwood barrels.
This thick, smooth soy carries the woody flavours of the cedar barrels with notes of tobacco, Armagnac and humus. Rich in umami, with very little acidity.
Of course, this aged soy is perfectly at home with sushi and sashimi, it is also wonderful drizzled in small amounts on strawberries or vanilla ice cream.
