A type of apricot that closely resembles a plum, umeboshi have a unique, refreshing flavour that is both sweet and sour. Eaten as delicacy just as they are or boiled and seasoned with rice. They can also be touched briefly to the grill to accentuate their fruit filled fragance.
Ingredients: Nanko Ume plums, salt, brown cane sugar, apple vinegar (apple juice, alcohol, salt), hon mirin (sticky rice, koji rice, sugar cane alcohol), honey
Store in a cool, dark place. Refrigerate once open.
