Forest grown shiitake mushrooms
We love shiitake! A kitchen cupboard staple and 3 in 1 product, what's not to love. Plus these are organically grown in the forests of Kyushu Island in southern Japan.

So not only do you get the delicious, umami boosting shiitake themselves, you also have the water that they rehydrate in overnight which is a great stock for sauces and soups, plus the stems to add flavour to more sauces and stock too.
There are two types of shiitake, donko and koshin. Donko have a closed cap, whilst koshin are harvested once the mushroom has opened.
