A traditional Japanese red vinegar made from the sake lees of premium Junmai Daiginjo and Junmai Ginjo sake brewed with Yamada Nishiki rice, one of Japan’s finest sake-brewing rice varieties.
 
Known as Akazu, or red vinegar, this distinctive vinegar has a naturally deep amber colour and a wonderfully rounded flavour. Made by the traditional vinegar makers Marusho, who have been producing vinegar in Wakayama since 1879, it has a clean acidity, gentle depth and a refreshing finish.
 
Akazu is particularly prized by sushi chefs for making Edomae-style sushi rice, where it gives the rice its characteristic warm colour and adds extra depth and umami without overpowering delicate toppings.
 
It is especially good with rice or delicate fish and seafood such as tuna, salmon, sea bass, sea bream, mackerel and scallops, where the Akazu’s depth works beautifully with their natural sweetness.
 
But don't save it just for sushi. Its balanced acidity makes it a versatile addition to dressings, marinades, pickles, sauces and cooked dishes, bringing a little more depth wherever you would normally reach for vinegar.

A little goes a long way

Akazu has plenty of flavour, so start with a small amount and add more to taste. Try it in place of rice vinegar, sherry vinegar or white wine vinegar when you want a little extra depth.
 
Store in a cool, dark place. Refrigerate after opening.

For sushi rice
Use Akazu on its own or combine it with a little rice vinegar to make sushi seasoning. It is traditionally used for Edomae-style sushi and is particularly good with richer fish and seafood. The vinegar will give your rice a subtle reddish-amber colour as well as a deeper, more savoury flavour.

For dressings
Whisk with a little soy sauce, sesame oil and a touch of sugar or mirin for a simple Japanese-style dressing. It works particularly well with cucumber, leafy salads, tomatoes and steamed vegetables.

For pickling
Use in quick pickles with cucumber, daikon, carrots or ginger. Its deeper flavour makes it particularly good with vegetables that can stand up to a more robust vinegar.

For cooking
Add a splash to sauces, marinades and braises, or use it to finish a dish just before serving. It is excellent with fish, seafood, pork and vegetables and can be used anywhere you would normally use rice vinegar.
