Deep, oaky, rich and mature, Golden Amber is an exceptional example of long-aged Japanese sake.
Awarded “Perfect Sake for a Gift” at the 2012 UK Sake Awards and winner of a Silver Award at the 2013 International Wine Challenge (IWC), this is a rare and unusual product.
Unlike most sake, which is enjoyed within a year of bottling, koshu (aged sake) represents less than 1% of total sake production in Japan. The ageing process is complex and requires careful control, making well-executed examples highly sought after.
To be classified as koshu, sake must be aged for a minimum of three years. Golden Amber is matured for an impressive 12 years, with the last four years in oak barrels traditionally used for ageing bourbon. Wood ageing is extremely uncommon in the sake world, where most aged sakes are matured solely in tank or bottle without contact with wood.
The result is a striking, dark amber sake with a rich, toffee and almond nose. On the palate it is smooth and beautifully balanced, offering deep notes of smoky oak, vanilla, caramel and warming spice. The flavour profile is reminiscent of a fine single malt whisky, yet with less than half the alcohol, acidity and calories.
It makes a refined after-dinner drink and an elegant alternative to traditional digestifs. It also pairs exceptionally well with rich pork dishes and mature hard cheeses.
Serve at room temperature to appreciate its depth and complexity, or gently warm to enhance the caramel and spice notes.
