Shirayuki Classic Junmai is a traditionally made, balanced and easy to enjoy Junmai-shu, that performs well both chilled and warm.
This sake reflects the richer, old-school styles enjoyed throughout Japan’s Showa era (1926–1989). What makes it particularly distinctive is its use of koji spores that were sealed away in a time capsule in the 1920s. These were later recovered in 1970 by Konishi Shuzo and used to recreate the flavour of historical Showa-period sake.
The aroma is warm and comforting, with notes of freshly baked bread, steamed rice, ripe banana and poached pear. Underlying hints of brown sugar, melon and molasses appear, followed by a subtle touch of white pepper on the finish. Medium in body, it has a pleasantly textured, slightly grainy mouthfeel that softens when gently warmed, revealing flavours of caramelised sugar and banana loaf.
It pairs beautifully with cream cheese, grilled skewers, roast chicken, barbecue dishes, pâté, cured meats, crème brûlée, cauliflower cheese and naturally sweet vegetables such as carrots and parsnips.
