Sobacha is made from carefully selected buckwheat seeds that are crushed and roasted to develop their distinctive nutty, toasted flavour and irresistible crunch. A staple in Japanese cuisine, sobacha is incredibly versatile, enjoyed both as a naturally caffeine-free infusion and as a delicious ingredient in sweet and savoury recipes.
The roasting process gently caramelises the natural sugars within the buckwheat, creating a rich aroma with subtle notes of toasted nuts and warm cereal. The crushed seeds infuse quickly, producing a light, golden liquor with a naturally sweet, mellow flavour, while the roasted kernels can also be eaten after brewing for added texture and fibre.
Despite its name, buckwheat is not a wheat or cereal grain but the seed of a flowering plant. It is naturally gluten-free, making sobacha suitable for those following a gluten-free diet or avoiding wheat. Buckwheat is also valued for its natural antioxidants, fibre and minerals, making it a popular choice for those looking to incorporate wholesome Japanese ingredients into their everyday cooking.
Sobacha is incredibly versatile in the kitchen. Brew it as a comforting hot infusion or serve chilled over ice for a refreshing summer drink. The roasted buckwheat can also be used to add a delicious nutty flavour and crunchy texture to rice dishes, salads, granola, yoghurt and porridge. Sprinkle it over ice cream, crème brûlée and other desserts, or incorporate it into bread, biscuits, cakes and cereal bars for an authentic Japanese twist.
