Ingredients:
- 2 fresh mackerel fillets
- 2 tbsp mikan ponzu
- 2 spring onions, finely sliced
- 1 tsp roasted sesame oil
- A handful of coriander or microgreens (optional)
Method:
- Season the mackerel lightly with salt.
- Grill or pan-fry skin-side down until crisp and cooked through.
- Mix the ponzu with sesame oil.
- Spoon over the warm fish and scatter with spring onions.
Serve with: steamed rice, cucumber salad or grilled tender stem broccoli.
Chef tip: Spoon the ponzu over the fish just before serving rather than marinating beforehand. The citrus stays brighter and the skin remains crisp.
