Grilled Mackerel with Mikan Ponzu

A classic combination that lets the rich flavour of mackerel shine.

Ingredients:

  • 2 fresh mackerel fillets
  • 2 tbsp mikan ponzu
  • 2 spring onions, finely sliced
  • 1 tsp roasted sesame oil
  • A handful of coriander or microgreens (optional)

Method:

  • Season the mackerel lightly with salt.
  • Grill or pan-fry skin-side down until crisp and cooked through.
  • Mix the ponzu with sesame oil.
  • Spoon over the warm fish and scatter with spring onions.

Serve with: steamed rice, cucumber salad or grilled tender stem broccoli.

Chef tip: Spoon the ponzu over the fish just before serving rather than marinating beforehand. The citrus stays brighter and the skin remains crisp.
