This Japanese wineberry jam is sweet and tangy, with a smooth, spreadable texture that's perfect for toast or yogurt.
Ingredients:
- 4 cups Japanese wineberries, washed
- 1½ cups sugar (adjust to taste)
- 2 tbsp lemon juice
- ½ tsp vanilla extract (optional)
Instructions:
- In a large pot, combine berries and sugar. Let sit for 15–20 minutes to release juices.
- Bring to a gentle boil over medium heat, stirring frequently.
- Reduce heat and simmer for 15–20 minutes until thickened.
- Stir in lemon juice (and vanilla if using).
- Pour into sterilized jars, seal, and let cool. Refrigerate once opened.
Spread on toast or croissants, swirl into yogurt, or use to fill tarts and muffins
