Wasabi rhizomes are commonly referred to as wasabi roots, denoting the part of the wasabi plant that grows underneath the ground. Wasabi rhizomes are grated to create fresh wasabi paste.

Real, fresh wasabi can be expensive because wasabi requires very specific conditions to grow, making it more difficult to produce. Plus, since it is mainly produced in Japan – its natural environment – it can become more expensive when transported to other markets.

However, by growing authentic, fresh wasabi right here in the UK, we can make it much more affordable and accessible for the UK market.

You’ll notice a price difference between our Japanese-grown and English-grown wasabi for this reason, with prices starting at £20 for individual Japanese wasabi rhizomes and £10 for individual English wasabi rhizomes. But no matter where they’re grown, all of our wasabi products are fresh and authentic!

Fresh wasabi is best because nothing else is added to it to detract from its authentic flavour. Wasabi pastes and powders are mostly made up of horseradish, mustard powders, colourings and flavourings due to the difficulty of growing wasabi plants – especially outside Japan.

In fact, some products called wasabi contain no actual wasabi! If you want to add authentic wasabi flavours to elevate your Japanese dishes, you need the real deal – not a horseradish paste marketed as wasabi!

Keep fresh wasabi rhizomes in an unsealed plastic bag stored in the fridge. Properly stored, they can last two weeks and beyond. For the best flavour, grate only what you need and enjoy after the paste has had 2-3 mins to oxidise. You can also grate and freeze wasabi for longer use.

Fresh wasabi is ideal for sushi and sashimi, but it also adds a zesty kick to steaks, noodle dishes, salad dressings, and even cocktails. Its clean, peppery heat elevates both traditional and modern recipes.

To grow wasabi at home in the UK, plant it in a shaded, cool spot with well-draining, slightly acidic soil. Ensure high humidity and water consistently to keep soil or compost damp but not flooded. Provide protection from pests like slugs.

Wasabi grows slowly, taking 18-24 months to mature; leaves, leaf stems, and flowers can all be picked and eaten while the rhizomes develop. Once rhizomes reach 6-8 inches in length, these can be harvested at any time.
