This black vinegar is made solely from brown (genmai) rice, and spring water. Traditionally brewed by master craftsmen at Iio Jozo, with a long maturation period to create a rich flavour of malt and umami. Adds depth of flavour to vinaigrettes, broths, sweet and sour sauces and works very well to dress lentils, chickpeas and roast vegetables.
