Produced in the heart of Shimane Prefecture, this exceptional gluten-free yuzu tamari from Igeta Shoyu brings together over a century of traditional Japanese brewing with vibrant citrus freshness.

Unlike standard soy sauce, tamari is brewed using soybean koji rather than wheat, resulting in a naturally gluten-free product with a deeper, richer flavour. Here, that bold umami base is elevated with generous amounts of fragrant yuzu juice, alongside daidai citrus, mirin, sake and rice vinegar for balance. The addition of kombu and bonito creates a layered, dashi-like complexity to deliver a refined, ponzu-style sauce that is both bright and savoury.
 
Founded in 1912, Igeta Shoyu has remained dedicated to natural fermentation methods, using locally sourced ingredients and pristine spring water from Hamayama Yusuigun, one of the best water sources in the Heisei Era as recognized by the Japanese Ministry of the Environment. 

Store in a cool, dark place and refrigerate once open.
