How to Make Onigiri

  • Cook the rice – Rinse the Koshihikari rice thoroughly and cook according to the instructions until tender. Allow it to cool slightly while still warm.
  • Prepare your filling – Remove the stone from the umeboshi and roughly chop the flesh. You can also experiment with other favourite fillings.
  • Shape your onigiri – Lightly dampen the mould to help prevent sticking. Add a layer of rice, place a little filling in the centre, cover with more rice and press into shape.
  • Add the finishing touches – Sprinkle with sesame and ume furikake, then wrap with a sheet of roasted nori just before serving for the best texture.
  • Get Creative with Your Fillings - Umeboshi is a traditional favourite, but onigiri are wonderfully versatile. Try fillings such as grilled salmon, tuna mayonnaise, cooked shiitake mushrooms or seasoned vegetables. You can also mix furikake directly into the rice before shaping for a quick, flavourful alternative.
