Over 200 Years of Japanese Vinegar-Making Tradition
Sakamoto Kurozu's story began around 1800 in Fukuyama, Kagoshima, a region renowned for its traditional rice vinegar production.
For generations, local makers have used large ceramic satsuma pots to ferment and mature rice vinegar outdoors, taking advantage of the area's mild climate. This distinctive method produces kurozu, or Japanese black vinegar, known for its deep amber colour, mellow acidity and complex flavour.
