Wasabi Mustard

I saw this on line, and after looking around the site, decided to take a gamble on this and bought several items, the Wasabi Mustard being one of them. I do like mustard, and it can be hard trying to find a flavour that is not too sharp and harsh, with enough kick, whilst still allowing you to enjoy the taste. I also get fussy with the texture, too powdery, or too watery and chances are it will stay in the fridge until I have overcome my purchasers guilt and throw it away.
When I opened this jar, I immediately saw the colour of the mustard, some of it sticking to the top of the jar, and stubbonly hanging on, whilst ever so slowly dropping, looked like a new tube of acrylic or oil paint had been squirted straight into the jar. Very impressed. The colour is deep and rich, it looks very good, a dark yellow somehwere between Coleman's English and hint of French mustard. The aroma from the jar was equally inviting, and so encouraged as I was, I put a small amount on a spoon and tasted it.
Immediately, I got the whole full blooded mustard taste, English strength, but with a definite note of wasabi. Some subtle flavours in there as well, but not overpowering, herbs and spices are certainly detectable, but the main horseradish type taste of the wasabi is evident, but second to the actual mustard flavour. Straight away, this has climbed to the top 2 or 3 mustards, and will remain there for a long while.
Overall, this is an excellent Mustard, with bite, the flavour and taste has not been sacrificed for the nose searing wasabi fumes. A great choice for cold meats. Pork pies or even deli type sandwiches where Yellow American mustard just doesn't cut it.
