Ingredients
- 500g ready cooked lentils - any summer veg (red and green peppers, small courgettes, cucumbers, cherry tomatoes)
- Finely sliced onion (optional)
- Pitted black olives (optional)
- 200g feta cheese, cubed
- Any summer herbs (basil, shiso, parsley, mint)
Dressing
- 1 tbsp mirin (or sub a sweet balsamic vinegar)
- 4 tbsp sudachi kombu ponzu
- 2 tsp ground sesame seeds
- 1 tbsp of our wasabi mustard
- 3 tbsp olive oil (or use 1 tbsp of sesame oil, 2 olive oil)
Method:
- Empty the lentils into a bowl.
- Chop the veg into small equal size cubes and add to the lentils.
- Thinly slice the onions and add to the lentils. chop the olives if large before adding and then finely chop herbs before adding.
- Top with cubed feta chesse.
- Mix all the dressing ingredients together by hand and add to the salad.
