Umeboshi are actually a pickled apricot that closely resembles a plum. Known for their salty and sour taste, umeboshi have a unique, refreshing flavour and a distinctive aroma.

Umeboshi are made by pickling apricots in salt, sugar, vinegar and honey for several months. This process gives them a tangy and salty flavour, with a hint of sweetness and a unique umami taste that can complement a wide range of dishes.

Eaten as delicacy just as they are or boiled and seasoned with rice, they can be used in a variety of dishes, including rice bowls, salads, dressings and marinades They can also be touched briefly to the grill to accentuate their fruit filled fragrance or added to a cake for a delicious umami taste. They can also be enjoyed as a snack on their own or as a garnish for cocktails and mocktails.
