Nanko Ume plum from Wakayama are well renowned for their excellent quality, this derives from the long tradition of their cultivation in Kishu Minabe, Wakayama. Unlike other areas, the fruits are allowed to fully ripen and fall naturally to the ground before they are harvested and rigorously graded for quality. The fruits and rock sugar are added to black rice vinegar where they remain to impart their flavour while the vinegar ages. The result is a vinegar perfectly balanced for acidity, fruit and sweetness.
Wonderful in dressings the vinegar can also be reduced and used to glaze savoury dishes and desserts. It also makes a surprisingly good addition to cocktail and an exceptionally refreshing drink when diluted 4 times in sparkling water.
