This dark Ume plum vinegar is crafted using prized Nanko Ume plums from Wakayama, Japan’s most celebrated ume-growing region. Renowned for their exceptional quality, these plums are cultivated in Kishu Minabe, where a centuries-old tradition ensures superior flavour and natural sweetness.
Unlike standard Ume production, the fruit is allowed to fully ripen on the tree and fall naturally before harvesting. Each plum is carefully graded for quality, ensuring only the best fruit is used.
The ripe Nanko ume plums are combined with rock sugar and infused into traditional Japanese black rice vinegar, where they slowly mature together. During this ageing process, the plums impart a deep fruit richness, balanced natural sweetness and a smooth, rounded acidity to give a complex, aromatic finish
