This is a lovely, bright, citrus-led, high quality Japanese soy sauce made by blending freshly pressed yuzu juice with the producer’s traditionally brewed Koikuchi Marudaizu soy sauce.

The soy sauce itself is fermented for a full year, developing natural sweetness and deep umami, before being combined with locally grown yuzu from Shikoku and a touch of kombu to round and soften the acidity.

The result is a beautifully balanced soy sauce that is savoury and lightly salty, lifted by the fragrant aroma of yuzu. There’s a gentle citrus bitterness on the finish, reminiscent of yuzu peel, which adds structure and freshness without overpowering delicate ingredients.
