The petty knife is the Japanese take on the classic paring knife – versatile and precise with a slim, pointed blade and a slightly wider profile than the European equivalent. Japanese knives are also significantly thinner and sharper than typical Western stainless-steel blades, making them ideal for delicate, detailed work like slicing fish, fine herbs and perfectly ripe tomatoes without crushing.
Western knives, often made from softer stainless steel, are less prone to chipping but dull much more quickly and will eventually need to be professionally sharpened to restore their edge.

It is made by combining iron with carbon without adding other compounds. With a Rockwell hardness of HRC 64–65, it holds an extremely fine edge, perfect for slicing without tearing or crushing.
