Crafted by the renowned Horikawaya Nomura, one of Japan’s oldest soy sauce makers with more than 300 years of expertise, this exceptional Mitsuboshi Premium Soy Sauce is presented in a beautiful ceramic carafe making it perfect for serving at the table as well as cooking.
Made using the rare, artisanal te-koji method, where the koji is prepared entirely by hand. The sauce is then slowly fermented and aged for over two years in historic kioke cedar barrels, following the rhythms of the seasons from autumn through multiple summers. This long, natural maturation develops remarkable depth, balance and complexity.
The result is a smooth, richly savoury soy sauce with gentle sweetness and exceptional umami, beautifully rounded and unctuous, coating the tongue with layers of woody character, delicate cocoa and chicory notes, balanced salinity and refined tannins.
Only the finest barrels are selected for the Mitsuboshi Premium grade, making production extremely limited. Presented in an elegant ceramic carafe, it’s an incredible gift or superb table condiment and a beautiful way to experience one of Japan’s most traditional and carefully crafted soy sauces.
