Hon mirin is traditionally fermented from rice, koji and alcohol, with sweetness coming from the rice. Aji-mirin is a mirin-style seasoning and often contains added sugars or syrups. For depth, aroma and balance, choose hon mirin.

Yes. Hon mirin contains alcohol, usually around the same strength as a light wine and it is also referred to as Japanese rice wine. Most recipes heat it, which softens the alcohol note and leaves the rice sweetness behind. Always check the product label if this matters.

Sometimes. Japanese mirin can replace a little sugar in sauces, glazes and marinades, but it also adds liquid, alcohol and savoury depth. Reduce other liquids slightly and taste before adding more, especially in dressings or dips.
