Myoga Ginger and Soba Noodles

A deliciously light and refreshing dish, perfect for summer and to showcase the unique flavour of myoga ginger.



  1. Cook the soba noodles according to package instructions, then drain and rinse under cold water.
  2. In a small bowl, mix the soy sauce, mirin, sake, sugar, sesame oil, and grated ginger.
  3. In a large bowl, combine the soba noodles, myoga ginger, and green onions.
  4. Pour the sauce over the noodles and toss to combine.
  5. Serve chilled or at room temperature.
