Smoking food indoors has never been easier thanks to this beautifully crafted donabe smoker.  Simply place the included cherry wood chips on some foil at the bottom of the smoking pot, lay your ingredients on the smoking racks above and put the pot on the hob. You don’t need to light the chips.

By pouring water between the lid and the body of the pot, a perfect seal is created which keeps the smoke exactly where it belongs, infusing your ingredients with incredible flavour from the cherry wood chips.

The thick Iga clay also means the ingredients are being cooked by far infra-red rays (the same as you’d get from glowing charcoal) - meaning your beautifully smoked dishes are ready in just 15-30 minutes, depending on the size of the ingredients.

The large version includes three tiers of grates, the smaller version comes with two tiers.
This Ibushi Gin smoker not only smokes, but can be used as a classic donabe for soups, stews and hot pots. Just bear in mind that the smoky essence tends to linger, which could add an intriguing depth to future dishes.

The Ibushi Gin can also be heated dry on the hob, which makes it perfect for roasting too.

BEFORE USING THE CLAY POT FOR THE FIRST TIME

Before using your donabe for the first time, it is essential to season it - a process known as medome.

Don’t let this put you off. It’s super simple to do and we’ll explain exactly how to do it. Think of it as welcoming the donabe into your home. After all, your nagatani-en pot will serve you and your family for years to come, so enjoy the process of preparing it for a long and happy life.

  1. Ensure the bottom of the clay pot is dry before starting
  2. Fill the pot ¾ full with water - measure the volume of the water.
  3. Add 20% of the water volume in cooked short grain rice and stir well.
  4. Cover with the lid and heat on low to medium heat till starting to simmer.
  5. Remove the lid, turn heat down to low, stir and continue to cook till the rice mixture resembles a paste. Stir from time to time to make sure the bottom does not burn. Do not let the mixture boil.
  6. When the rice has reached the paste stage, you can turn off the heat and leave the mixture to cool
    completely which should take about an hour.
  7. Empty the rice paste and gently rinse your pot and let it air dry.
  8. Your clay pot is now ready to use!
