This is a beautifully made pot. So far I have used it to smoke duck, peppers, asparagus, walnuts, Agen prunes, Pecorino cheese and burrata. Everything was delicious. It takes a very short time to set up and use. 4-5 mins to get the cherrywood chips smoking, 6-7 minutes to smoke and 20 minutes without heat to finish off.
This pot doesn't work on a ceramic or induction hob. It is best used on a gas hob, which I don't have, so I bought a Iwatani gas stove. This can be used inside and out and it is very economical to run once purchased. It is cheaper than electricity as a can of butane for £1.50 will last about 70 hours at full flame.
A great adventure in Japanese cooking. Highly recommended.
