Inaniwa udon is one of Japan’s finest noodles, originally they were made exclusively for feudal emperors during the Edo era. These high-quality noodles come from the city of Inaniwa in Akita Prefecture, they are still crafted using a process that lasts four days, using time-honoured methods that have remained largely unchanged since 1665.

Made using only locally grown Japanese wheat and pure water from Mt. Kurikoma, Inaniwa udon noodles are still produced using the traditional methods. The dough is hand-kneaded and rested for extended periods, encouraging the formation of fine air bubbles that create a uniquely smooth, elastic texture. The noodles are thinner and silkier than standard udon, with a gentle bite and a beautiful pale colour.

Cooking Instructions:

  1. Bring a large pan of water to the boil and add the noodles.
  2. Let them cook for just 3 minutes, stirring occasionally to prevent sticking.
  3. Once cooked, drain immediately and rinse briefly under cold water to stop the cooking process and preserve the texture.

How to Use:

  • For traditional use, serve the noodles in a warm broth made with soy sauce, dashi or miso, topped with spring onions, mushrooms, tofu or a soft-boiled egg.
  • They are equally delicious served cold with a tsuyu dipping sauce, this is a popular summer dish in Japan that highlights the noodles’ refined texture.
  • Inaniwa udon also adapts beautifully to Western-style dishes. Use them as an alternative to pasta or toss them cold with sesame oil, soy sauce and fresh greens to create a light, flavourful noodle salad.

Store in a cool, dark place and reseal well after opening.
