Iyokan is the second most cultivated citrus in Japan after Mikan, but largely unknown in the west. A cross between two varieties of mandarin the flavour is sweet and sour. More tart and bitter than Mikan but not as sour as grapefruit. Famously juicy, the fruit also has an impressive fragrance when the easily peeled skin is opened. The zest and juice are used in pastry, cream desserts, chocolate and fish dishes where it enhances the flavour.
