Bring a taste of Japan to your breakfast with soft, fluffy pancakes! This ready-made mix produces a lighter, naturally sweet pancake that’s perfect for both sweet and savoury dishes.

Made using finely milled rice flour (Komeko means “rice flour” in Japanese), grown in Ishikawa Prefecture, this mix is gluten-free, making it ideal for anyone avoiding wheat or looking for an alternative to the traditional wheat flour. The rice flour gives the Japanese pancakes a soft, springy texture and a light, delicate flavour, the vanilla sugar adds sweetness, and the baking powder gives the pancakes the signature rise of Japanese ‘hotcakes’.

Perfect for breakfast or brunch, enjoy them with fresh berries, honey or syrup or you can try a savoury topping like eggs and cheese. You can also use it to make Japanese-style savoury pancakes, like okonomiyaki. The light sweetness in the batter can balance the strong, umami-rich ingredients of cabbage, mayonnaise and bonito flakes.

Serves 2

  • In a bowl, mix 2 eggs with 120ml of milk (or dairy-free alternative).
  • Add 150g of the Komeko pancake mix and whisk until smooth.
  • Cook in a lightly oiled pan over medium heat until golden on both sides.
  • Serve warm with fruit and syrup or try a savoury twist with eggs, cheese or even shredded seaweed.

Store in a cool, dark place, refrigerate once opened in an airtight container.
