Don't be fooled by the name - this pot is not just for miso. Crafted from premium porous Iga clay, this beautifully thick-walled pot transforms everyday cooking into something special. The exceptional heat retention properties allow your dishes to continue cooking gently with residual warmth even after removing from heat, slowly developing rich, complex flavours that penetrate deep into every ingredient.

The thoughtfully designed rounded bottom naturally captures and distributes the flame heat, while the curved shape promotes ideal convection currents during simmering, ensuring even heat distribution throughout your cooking.

This donabe can be safely heated without liquid, opening up endless cooking possibilities - from traditional simmering and stewing to roasting, baking, and even frying.

Each pot is handcrafted by skilled artisans at Nagatani-en, ensuring no two pieces are identical, so please be aware that your pot may differ from the photo. The firing process creates distinctive colour variations and natural beauty marks, making your donabe unique and brings authentic Japanese craftsmanship to your kitchen.

The pot comes in two sizes:

  • Large size: 1800 ml - ideal for family gatherings and entertaining, serves 5-6 people
  • Small size: 1000 ml - perfect for intimate meals and daily cooking, serves 2-3 people

BEFORE USING THE CLAY POT FOR THE FIRST TIME

Before using your donabe for the first time, it is essential to season it - a process known as medome.

Don’t let this put you off. It’s super simple to do and we’ll explain exactly how to do it.

Think of it as welcoming the donabe into your home. After all, your nagatani-en pot will serve you and your family for years to come, so enjoy the process of preparing it for a long and happy life.

  1. Ensure the bottom of the clay pot is dry before starting
  2. Fill the pot ¾ full with water - measure the volume of the water.
  3. Add 20% of the water volume in cooked short grain rice and stir well.
  4. Cover with the lid and heat on low to medium heat till starting to simmer.
  5. Remove the lid, turn heat down to low, stir and continue to cook till the rice mixture resembles a paste. Stir from time to time to make sure the bottom does not burn. Do not let the mixture boil.
  6. When the rice has reached the paste stage, you can turn off the heat and leave the mixture to cool completely which should take about an hour.
  7. Empty the rice paste and gently rinse your pot and let it air dry.
  8. Your clay pot is now ready to use!
