Produced in small batches by the Mikura Vinegary in Mie Prefecture, this red vinegar is crafted using traditional fermentation methods, allowing time for the flavours to mature and the acidity to soften. Sake kasu vinegar offers a deeper flavour than standard rice vinegar. Use it to season sushi rice for added richness and subtle umami that enhances the natural flavour of fish and seafood.

It also makes an excellent base for vinaigrettes and Japanese salad dressings, pairing well with leafy greens, tofu and seafood. Combine with soy sauce, sesame oil, miso or honey for a balanced, savoury dressing.
