A convenient form of dashi, this traditional Shinmaya powdered kombu dashi soup stock uses Hokkaido's finest cultivated kelp. An essential ingredient in Japanese cooking, dashi stock is used as a base for many dishes like soups, stews, and sauces.

Shinmaya is a well-known brand in Japan for producing high-quality authentic dashi products. Their dashi powder is instant, meaning you get the deep, rich flavour of dashi without the time-consuming process of boiling and steeping kombu to satisfy your everyday soup stock needs.

Kombu (Kelp) Extract

Kombu is a seaweed harvested primarily from the cold waters around Hokkaido, Japan. It is rich in umami, the savoury taste that forms the backbone of Japanese cuisine.

Kombu naturally contains glutamic acid, an amino acid responsible for umami, which also acts as a natural flavour enhancer.

Umami is the Japanese word used for one of the five basic tastes in addition to salt, sweet, sour, and bitter.

Dried Kelp Powder

Unlike fish-based dashi, this convenient and versatile dashi powder has a more subtle flavour and is completely plant based, making it ideal for vegetarian or vegan dishes.

Easy to Use

Just a small amount of the powder (usually around 1 tsp per cup of water) is needed to make a flavourful dashi broth. Adjust the quantity depending on the desired strength.

You can use more or less powder depending on whether you want a light or strong dashi base, making it adaptable to different recipes and taste preferences.

How to Use

Basic Dashi: Dissolve the powder in warm water to create an instant stock. This can be used as the base for soups, stews, or noodle dishes.

Miso Soup: After preparing the dashi, add miso paste, tofu, seaweed, and green onions to make a quick and flavourful miso soup.

Broth for Noodles: Use the dashi as the base for udon, soba, or ramen broth. Add soy sauce, mirin, and other seasonings to taste.

Seasoning Vegetables: Cook vegetables in a dashi broth to bring out their natural flavour without the need for additional seasoning.

Once opened, make sure to reseal the packaging tightly or transfer it to an airtight container and refrigerate to maintain its freshness.
