This small batch condiment is made from the leaves of the red shiso plant (also called Aka Shiso in Japan), a member of the mint family. Grown in Aomori, northern Japan by a small artisan farmer using seeds passed down through generations, this variety is prized for its bold flavour and sought after deep purple colour. The leaves have a clean, refreshing taste with a lower salt content than many other seasonings.

The farmer grows and harvests the leaves with great care. During cultivation, the plants are sprayed with a natural rice vinegar solution that helps keep pests away and improves the quality of the leaves. Only medium-sized leaves are hand-selected, then seasoned with plum vinegar and sun-dried sea salt—no artificial additives, colours, or preservatives are used.

Red shiso is an essential herb in Japanese cooking. The flavour is fruity and tangy, with notes of hibiscus and sour cherry, and it’s often used to add flavour and colour to dishes. It’s also valued in Japan for its natural health benefits, including anti-inflammatory, antiallergic, and antiseptic properties.

This condiment is produced in very small quantities and is perfect for chefs, food lovers or anyone looking to try something special.

These leaves are incredibly versatile and can be used to add a fresh, tangy, and slightly fruity note to a variety of dishes.
