Yakitori sauce is a tasty Japanese condiment, designed for adding depth of flavour to skewers of grilled chicken, beef, fish or vegetables.
Traditionally made from a combination of soy sauce, mirin (a sweet rice wine), sake (Japanese rice wine) and brown sugar, it can also include other ingredients such as garlic, ginger, or vinegar.
This sauce utilizes Fukuoka Marudaizu soy sauce. Unlike other soy sauce, which is usually made from a combination of whole and defatted soy beans, Marudaizu soy sauce is made using only whole soy beans, giving it a milder but more complex flavour.
Yakitori sauce is thick and glossy and can be used to marinate chicken or vegetables before cooking. It is then brushed onto the skewers while they are grilled over hot coals, giving them a delicious glaze and a rich savoury umami flavour, with a touch of sweetness, for the perfect balance.
