Crafted yuzu jelly from Kochi is made from the finest Yuzu fruit harvested when perfectly ripe in Ehime Prefecture of Japan.

Finest Yuzu from Ehime Prefecture

Ehime Prefecture, known for its fertile soil and optimal climate conditions, produces some of the finest yuzu fruits in Japan. Hand-picked at the peak of ripeness, these yuzu fruits boast exceptional flavour and fragrance.

Yuzu Juice

The process of creating this yuzu jelly involves traditional artisanal techniques. The freshly squeezed juice of the hand-picked yuzu fruits, is combined with sugar and natural pectin in a recipe designed to achieve the perfect balance of sweet and tart. The mixture is then cooked in small batches in a traditional cauldron, preserving the yuzu's natural flavours and aromas.

Appearance and Flavour

The resulting yuzu jelly is opaque, with a lovely smooth texture. The flavour is fresh and full of the vibrant citrus notes of the yuzu fruit. The accompanying acidity and tanginess balance the sweetness of the jelly perfectly.

This versatile condiment can elevate a wide range of dishes. Serve it as a spread on toast, pastries, and scones, to add a zesty kick to breakfast or afternoon tea.  See How To Use for more ideas!

Additionally, it can be used as a topping for desserts such as yoghurt, ice cream, or cheesecake, or incorporated into savoury recipes to impart a refreshing citrus flavour.

Create a vibrant, tangy marinade for chicken or fish by mixing the jelly with soy sauce, ginger, garlic and a splash of rice vinegar.

Use as a glaze for roasted ham, the jelly will caramelise adding a sweet and tangy flavour to the rind.

Yuzu jelly can also be used alongside goat's cheese, brie, or camembert for a twist on the traditional fruit accompaniment.
