Designed for the Japanese restaurant market, especally ramen and udon specialists looking for a powerfully flavoured, but consistent stock. Highly concentrated flavours of smoked katsuobushi and soy sauce are balanced with mirin, honey and apple vinegar.
The balance between salt, mineral and umami flavours with the sweetness of mirin and honey is exceptional. This is not the first concentrated dashi we discovered but it is currently rated the best owing to its rare balance. A fast and powerful way to enhance sauces, reductions and any dish that calls for stock.
