Sobacha is a well-loved Japanese drink made from roasted buckwheat seeds. It has a delightfully nutty, sweet flavour, accompanied by a satisfyingly crunchy texture. This infusion is caffeine-free and calorie-free, making it an ideal choice for those seeking a healthier option, rich in antioxidants and can be equally enjoyed served hot or cold.

Buckwheat seeds, referred to as "soba," are crushed and roasted to make sobacha. Crushing the seeds speeds up the infusion process and the roasting caramelises the sugar, giving a naturally sweet flavour with nutty and toasted undertones to the sobacha.

Despite its name, buckwheat is a seed and not a grain, making it gluten-free and suitable for people with celiac disease or gluten allergies.

Sobacha is also recognised for its health benefits, including its ability to lower blood sugar levels and provide a significant source of natural fibre.

For a warm infusion, steep 2 teaspoons of sobacha in hot water for 1-2 minutes.

If opting for a chilled beverage, steep 4 teaspoons of sobacha in 1 litre of hot water for 1-2 minutes, then allow it to cool and serve over ice if desired.

Additionally, sobacha can be used to enhance the flavour of rice dishes during cooking and can elevate the texture of desserts like crème brûlée or ice cream, as well as baked goods such as bread, biscuits, or cereal bars.
