Most Japanese sake alcohol ranges from around 13% to 17% ABV, making it slightly stronger than many wines but lower in alcohol than spirits.

Japanese sake can be served chilled, at room temperature or gently warmed depending on the style. Delicate ginjo and daiginjo sake are usually enjoyed cold to preserve aroma, whilst fuller-bodied junmai sake often develops a deeper savoury character when warmed slightly.

Japanese sake can range from light, crisp, aromatic and fruity to rich, savoury and earthy. Common tasting notes across different styles include melon, pear, steamed rice, nuts, bread, pepper, molasses and umami.

Japanese sake pairs naturally with sushi, sashimi and tempura, but it also works very well with grilled meats, fried foods, mushrooms and creamy dishes because of its umami depth. Dishes like sushi are generally best paired with lighter sake types (like ginjo and daiginjo) to avoid overpowering the delicate flavours, whereas richer dishes can pair well with a slightly warmed or room temperature junmai sake thanks to its umami notes, which enhance the savoury quality of the meal.

Unopened sake should be kept cool and away from direct sunlight. Once opened, it’s best refrigerated and consumed within several days for optimal flavour.
