Miso paste is salty, savoury and rich in umami. Lighter varieties like white miso (shiro miso) lean sweet and mellow, while darker ones like red miso or hatcho miso are more intense, earthy and full-bodied. The exact flavour depends on ingredients, fermentation time and the producer.

Some miso paste is gluten free, but not all. Miso made only from soybeans and rice koji, like our white miso, is naturally gluten free. Barley miso contains gluten. Check individual product descriptions for allergen details.

Keep miso paste sealed in the fridge after opening. Because it's fermented, it lasts well, typically months. The colour may darken slightly over time, which is normal and doesn't affect quality.
