Well known for their meaty texture and nutty flavour, shiitake mushrooms are a Japanese staple. They are best with soups, stir fries and meat or cooked alongside garlic, pak choi, or broccoli with a dash of vegetable oil or sesame oil to bring out their earthy flavour.
